Ciao a tutti! Oggi abbiamo cucinato delle bignè tanto grandi quanto deliziose: le bignole con cioccolato e panna!
Hi everyone! Today we’ve made some big and delicious cream puffs, with chocolate and whipped cream!
Ingredienti per le bignole:
100 g di burro
100 ml di acqua
3 uova
100 g di farina 00
Ingredienti per la farcitura:
300 g di latte intero
3 tuorli
100 g di zucchero semolato
20 g di farina 00
60 g di cacao amaro in polvere
200 g di panna fresca liquida
Per la pasta choux mettere il burro e l’acqua in un pentolino a fuoco basso, quando il burro si sarà sciolto unire la farina mescolando e continuare a cuocere finchè in si forma una palla di impasto. Mettere in una ciotola e unire un uovo alla volta frullando con un frullino elettrico. Mettere l’impasto in una sac à poche e fare dei cumuli di impasto sulla placca da forno foderata di carta forno. Infornare a 180 gradi in modalità ventilata per circa 20-25 minuti. Per fare la crema mescolare i tuorli con lo zucchero e la farina, poi unire a poco a poco il latte, e mettere tutto sul fuoco basso continuando a mescolare. Quando la crema inizia ad ispessirsi unire il cacao e mescolare. Mettere la crema a raffreddare in frigo coperta a contatto con pellicola. Montare la panna. Tagliare il cappuccio alle bignole, farcirle prima con un cucchiaio di crema al cacao, poi con un cucchiaio di panna, rimettere il cappuccio e decorare con una spolverata di zucchero a velo e di cacao amaro. 100 gr of granulated sugar

60 gr of unsweetened cocoa powder
200 gr of fresh liquid cream
To make the cream puffs, put the butter and the water in a small pot and heat it using a low flame; when the butter has melted, add the flour while you keep mixing and let them cook until a bowl of mixture is formed. Put it in a bowl and add one egg at the time, while you mix with an electric mixer. Put the mixture in a sac à poche and make some cuffs out of it on a baking tray covered with wax paper. Put them in the oven at 180 C for about 20-25 minutes. To make the cream, mix the yolks with the sugar and the flour, then add the milk slowly and put the mixture on a low flame to heat. When the cream starts thickening, add the cocoa and keep mixing. Cover the cream with some wrap and put it in the fridge. Whip the cream. Cut the edge of the cuffs, stuff them with a spoon of chocolate cream, then with a spoon of whipped cream, put the cut part of the cuffs on top of them and garnish with come icing sugar and cocoa powder.
